  • 1 lb lean ground beef
  • 4 medium Yukon Gold potatoes, peeled and cubed
  • 2 medium bell peppers (1 red, 1 green), chopped
  • 1 medium onion, finely chopped
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian herbs

Instructions

  1. Preheat oven to 375°F (190°C). Lightly spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until crumbly (5-7 minutes). Drain excess grease.
  3. In a bowl, combine cubed potatoes, chopped bell peppers, diced onion, canned tomatoes (with juice), garlic powder, salt, and pepper. Mix well.
  4. Layer half of the potato mixture in the baking dish. Add all the browned beef on top and finish with the remaining potato mixture.
  5. Cover tightly with aluminum foil and bake for 45 minutes. Remove foil for the last 15 minutes to allow browning.
