Description

Cilantro Lime Tofu Bowls are a vibrant and refreshing dish that combines crispy marinated tofu with colorful veggies and grains. This delightful meal is perfect for any occasion, whether it’s a casual lunch with friends or a nutritious dinner at home. Each bowl is bursting with flavor from the zesty cilantro-lime dressing, making it an irresistible choice that’s both healthy and satisfying.

Ingredients

Scale
  • 14 oz firm tofu
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp olive oil
  • 1 cup bell peppers, chopped (any color)
  • 1 cup cooked quinoa or rice
  • 2 cloves garlic, minced
  • 1 tbsp honey or maple syrup
  • Salt to taste

Instructions

  1. Press the tofu: Drain and wrap the firm tofu in a kitchen towel, placing a heavy object on top for 15-20 minutes.
  2. Cut the tofu into cubes: Smaller cubes create extra crispiness when cooked.
  3. Marinate: In a bowl, mix olive oil, minced garlic, lime juice, honey (or maple syrup), chopped cilantro, and salt. Toss the tofu cubes until coated.
  4. Bake: Preheat your oven to 400°F (200°C). Spread marinated tofu on a parchment-lined baking sheet and bake for 25-30 minutes until golden brown.
  5. Prepare veggies: While the tofu bakes, chop bell peppers and any additional vegetables you prefer.
  6. Assemble bowls: Layer cooked quinoa or rice in bowls, add crispy tofu cubes and vegetables, and drizzle with more cilantro-lime dressing before serving.
