Ingredients

For the Soup Base
  • 1 head cabbage chopped
  • 2 medium carrots chopped
  • 2 stalks celery chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
For the Broth
  • 4 cups vegetable broth low-sodium
  • 1 can diced tomatoes
  • 2 leaves bay leaves
For Seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon herbs (thyme or parsley) fresh or dried

Method

Preparation
  1. Chop fresh vegetables—cabbage, carrots, and celery—into bite-sized pieces.
Sautéing Aromatics
  1. In a large pot, heat a splash of olive oil over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
Adding Vegetables
  1. Toss in your prepared cabbage, carrots, and celery into the pot. Stir well to combine, cooking for an additional 5 minutes until they begin to soften.
Pouring in Broth
  1. Carefully add vegetable broth to the pot. Bring it to a gentle simmer over medium-high heat.
Seasoning
  1. Sprinkle in salt, pepper, and herbs like thyme or bay leaves according to taste. Let it simmer uncovered for about 20-25 minutes until all vegetables are tender.
Blending (Optional)
  1. For a creamier texture, use an immersion blender to puree part of the soup while leaving some chunks intact.
Serving
  1. Ladle the hot Weight Loss Cabbage Soup into bowls and garnish with fresh parsley or a squeeze of lemon juice before serving.
