Ingredients
  

Beans
  • 1 can kidney beans rinsed and drained
  • 1 can chickpeas rinsed and drained
  • 1 can green beans cut into bite-sized pieces
Vegetables
  • 1 cup chopped bell pepper any color
  • 1 cup chopped red onion
  • 1/2 cup chopped celery
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Beans
  1. Open the cans of kidney beans, chickpeas, and green beans. Rinse and drain them well.
Mix the Vegetables
  1. In a large mixing bowl, combine the chopped bell pepper, red onion, and celery.
Combine Ingredients
  1. Add the rinsed beans to the bowl with the vegetables.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper.
Toss the Salad
  1. Pour the dressing over the salad and toss gently to combine all ingredients.
Serve
  1. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
