Tacos al Pastor

Tacos al Pastor are a popular Mexican dish made with marinated pork, pineapple, and fresh toppings, served in soft corn tortillas.

Ingredients
  

Marinated Pork
  • 2 lbs pork shoulder cut into thin slices
  • 1/4 cup achiote paste
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp black pepper
Taco Assembly
  • 8 pieces corn tortillas
  • 1 cup pineapple diced
  • 1 cup onion finely chopped
  • 1 cup cilantro chopped

Method
 

Marinate the Pork
  1. In a blender, combine achiote paste, orange juice, pineapple juice, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.
  2. Place the pork slices in a bowl and pour the marinade over them. Mix well and let marinate for at least 1 hour, preferably overnight in the refrigerator.
Cook the Pork
  1. Preheat the grill to medium-high heat. Remove the pork from the marinade and discard the marinade.
  2. Grill the pork slices for about 5-7 minutes on each side, or until cooked through and slightly charred.
  3. Remove from the grill and let rest for a few minutes before slicing into small pieces.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Place a portion of the grilled pork on each tortilla, top with diced pineapple, chopped onion, and cilantro.
  3. Serve with lime wedges on the side.

Notes

For an authentic flavor, consider using a vertical spit (trompo) for cooking the pork, similar to traditional methods.
