Ingredients
  

Shortbread Cookie Base
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour sifted
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Strawberry Filling
  • 1 cup fresh strawberries hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Method
 

Prepare the Strawberry Filling
  1. In a bowl, combine chopped strawberries, sugar, and lemon juice. Mix well and set aside to macerate for about 10 minutes.
Make the Shortbread Dough
  1. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Gradually add the sifted flour and salt, mixing until a dough forms.
  3. Stir in the vanilla extract until well combined.
Shape and Bake Cookies
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Roll out the dough on a lightly floured surface to about 1/4 inch thick.
  3. Use a cookie cutter to cut out shapes and place them on the prepared baking sheet.
  4. Spoon a small amount of the strawberry filling onto half of the cookies, then top with the remaining cookies.
  5. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
Cool and Serve
  1. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
