Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into strips
  • 2 tbsp olive oil for marinade
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Street Corn
  • 2 ears corn grilled and kernels removed
  • 1/4 cup mayonnaise for dressing
  • 1/4 cup cotija cheese crumbled
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp cilantro chopped
Rice and Toppings
  • 2 cups cooked rice white or brown
  • 1 avocado sliced
  • 1 cup black beans cooked
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion diced

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add chicken strips and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
Prepare the Street Corn
  1. Grill the corn on the cob until charred, about 10 minutes. Remove kernels from the cob and place in a bowl.
  2. Mix the grilled corn with mayonnaise, cotija cheese, lime juice, and cilantro.
Assemble the Bowl
  1. In each serving bowl, layer cooked rice, black beans, grilled chicken, street corn mixture, avocado slices, cherry tomatoes, and red onion.
  2. Drizzle with additional lime juice if desired and serve immediately.
