Ingredients
  

Horchata Base
  • 1 cup long-grain white rice rinsed
  • 4 cups water
  • 1 cup milk or dairy-free alternative
  • 1/2 cup sugar adjust to taste
Strawberry Mixture
  • 1 cup fresh strawberries hulled and sliced
  • 1 tablespoon lime juice

Method
 

Prepare Horchata Base
  1. In a blender, combine the rinsed rice, water, and cinnamon stick. Blend on high until the rice is finely ground, about 1-2 minutes.
  2. Let the mixture sit for at least 30 minutes to allow the flavors to meld.
  3. After resting, strain the mixture through a fine mesh strainer into a large bowl, discarding the solids.
  4. Stir in the milk and sugar until well combined.
Blend with Strawberries
  1. In the blender, combine the prepared horchata base with the fresh strawberries and lime juice. Blend until smooth.
  2. Taste and adjust sweetness if necessary.
  3. Serve over ice and enjoy!
