Ingredients
  

For the Salmon
  • 4 fillets Salmon choose skin-on for added flavor
  • 2 tablespoons Olive oil or melted butter
  • to taste Salt
  • to taste Pepper fresh cracked enhances aroma
For the Creamed Leeks
  • 2 leeks Leeks use white and light green parts
  • 1 cup Heavy cream or half-and-half for a lighter option
  • 2 cloves Garlic freshly minced
  • 1 teaspoon Thyme fresh leaves
For the Vegetables
  • 1 bunch Asparagus snap off woody ends
  • 2 medium Carrots julienned
  • 1 cup Peas fresh or frozen

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Sauté leeks in a skillet over medium heat with olive oil for 5-7 minutes until soft and fragrant.
  3. Add chopped carrots and asparagus to the skillet and stir for an additional 3-4 minutes until tender yet crisp.
  4. Pour in heavy cream and season with salt and pepper. Let it simmer for about 5 minutes until thickened.
  5. Season the salmon fillets with lemon juice, salt, and pepper. Place on a lined baking sheet.
  6. Bake the salmon for 12-15 minutes or until it flakes easily with a fork.
  7. Serve the salmon topped with the creamy leeks and vegetables, garnishing with fresh herbs if desired.
