Ingredients
  

Spring Roll Filling
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 cup cucumber julienned
  • 1 cup bell pepper sliced
  • 1 cup fresh herbs such as mint or cilantro
  • 8 pieces rice paper wrappers
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 tablespoons water to thin the sauce
  • 1 clove garlic minced
  • 1/2 teaspoon red pepper flakes optional

Method
 

Prepare the Filling
  1. In a mixing bowl, combine shredded carrots, cabbage, cucumber, bell pepper, and fresh herbs.
Soak Rice Paper
  1. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft.
Assemble Spring Rolls
  1. Place a small amount of the filling in the center of the softened rice paper. Fold the sides over the filling and roll tightly from the bottom up.
Make Peanut Sauce
  1. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, water, minced garlic, and red pepper flakes until smooth.
Serve
  1. Arrange the spring rolls on a serving platter and serve with the peanut sauce for dipping.

Notes
