Ingredients
  

Filling
  • 1 cup fresh spinach chopped
  • 1 cup artichoke hearts canned or frozen, chopped
  • 1 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup parmesan cheese grated
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Bite Base
  • 1 package phyllo pastry sheets thawed

Method
 

Prepare the Filling
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, artichoke hearts, cream cheese, sour cream, parmesan cheese, minced garlic, salt, and black pepper. Mix until well combined.
Assemble the Bites
  1. Lightly grease a muffin tin. Cut phyllo pastry sheets into squares and layer them in each muffin cup, allowing the edges to hang over.
  2. Spoon the spinach and artichoke mixture into each phyllo cup, filling them generously.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the phyllo is golden brown and crispy.
  2. Remove from the oven and let cool slightly before serving.

Notes

These bites can be made ahead of time and frozen. Just bake them directly from the freezer, adding a few extra minutes to the cooking time.
