Ingredients
  

Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn canned or grilled
  • 1 cup black beans rinsed and drained
  • 1 cup avocado diced
  • 1 cup cheddar cheese shredded
Chicken
  • 2 cups grilled chicken breast sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Let rest before slicing.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and black pepper until well combined.
Assemble the Salad
  1. In a large bowl, combine romaine lettuce, cherry tomatoes, corn, black beans, avocado, and cheddar cheese.
  2. Add the sliced grilled chicken on top and drizzle with the dressing. Toss gently to combine.
