Method
 

Preparation
  1. Slice your beef thinly against the grain for even cooking.
  2. Rub the sliced beef with salt, pepper, and spices. Let it sit for 30 minutes.
  3. Preheat the smoker to 225°F and add wood chips.
Cooking
  1. Smoke the beef for 1 to 1.5 hours until it reaches 135°F for medium-rare.
  2. Sauté onions and bell peppers in olive oil until tender, about 10-15 minutes.
  3. Add smoked beef to the skillet with veggies and top with provolone cheese. Cover until melted, about 2-3 minutes.
Assembly
  1. Load the cheesy beef and veggie mixture onto toasted hoagie rolls.
  2. Garnish with fresh parsley if desired.
