Ingredients
  

For the Sauce
  • 1 lb shrimp (peeled and deveined) Fresh shrimp adds the best taste, but you can use frozen shrimp; just thaw and drain well
  • 1 tablespoon olive oil For sautéing; substitute with butter for a richer flavor
  • 1 medium onion (diced) Adds sweetness and depth; shallots can be used for a milder taste
  • 2 cloves garlic (minced) Fresh garlic elevates the dish; garlic powder can be used in a pinch
  • 8 ounces mushrooms (sliced) Use cremini or button mushrooms for earthy flavors; omit if you're not a fan
For the Creamy Base
  • 1 cup sour cream Provides creaminess; Greek yogurt is a great low-fat substitute
  • 1 tablespoon Dijon mustard Adds tanginess; yellow mustard works too if that's what you have on hand
  • 1 teaspoon Worcestershire sauce Essential for umami flavors; can be left out for a milder taste
For Serving
  • 8 ounces egg noodles Cooked according to package instructions; feel free to use gluten-free pasta if needed
  • 1/4 cup fresh parsley (chopped) For garnish and freshness; dried parsley can be used in half the amount
  • Salt and pepper to taste Adjust based on your preference for seasoning

Method
 

  1. Sauté the onions and garlic in a large skillet over medium heat until fragrant and translucent, about 3-4 minutes.
  2. Add the shrimp to the skillet and cook until they turn pink and opaque, approximately 3-5 minutes.
  3. Stir in the mushrooms and sauté for another 4-5 minutes, allowing them to soften and release their delicious juices.
  4. Mix the flour into the skillet, stirring constantly for about 1 minute to create a roux that thickens your sauce beautifully.
  5. Pour in the broth and cream, stirring continuously until everything is well combined. Cook on low heat for around 5 minutes.
  6. Season with salt, pepper, and fresh herbs of your choice for that extra freshness! Adjust to taste for a perfect finish.
  7. Serve the shrimp stroganoff over cooked egg noodles or rice, garnishing with additional herbs if desired.
