Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 2 tablespoons olive oil for searing
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 lemon zest for flavor
For the Lemon Orzo
  • 1 cup orzo pasta uncooked
  • 2 cups vegetable broth or water
  • 1 tablespoon butter for richness
  • 1 tablespoon lemon juice freshly squeezed
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Orzo
  1. In a pot, bring vegetable broth to a boil. Add orzo and cook according to package instructions until al dente.
  2. Once cooked, drain the orzo and return it to the pot. Stir in butter, lemon juice, and parsley. Season with salt and pepper to taste.
Cook the Salmon
  1. While the orzo is cooking, heat olive oil in a skillet over medium-high heat.
  2. Season the salmon fillets with salt, pepper, and lemon zest. Place the fillets skin-side down in the skillet.
  3. Cook for about 4-5 minutes, then carefully flip and cook for an additional 3-4 minutes until cooked through.
Serve
  1. Plate the lemon orzo and top with seared salmon. Garnish with additional parsley and lemon wedges if desired.

Notes
