Ingredients
  

For the Salmon
  • 4 fillets Salmon fresh, skin-on or skinless
  • 2 tablespoons Olive oil for searing
  • to taste Salt
  • to taste Pepper
For the Mango Salsa
  • 2 Ripe mangoes chopped
  • 1 small Red onion finely chopped
  • 1 medium Jalapeño minced
  • 1/4 cup Fresh cilantro chopped
  • 2 tablespoons Lime juice freshly squeezed
  • to taste Salt for seasoning

Method
 

Prepare the Salmon
  1. Preheat your oven to 400°F. Pat the salmon fillets dry and season them generously with salt and pepper.
Sear the Salmon
  1. Heat a skillet over medium-high heat and add a splash of olive oil. Once hot, place the salmon skin-side down and cook for about 4-5 minutes until the skin is crispy.
Bake the Salmon
  1. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes. The salmon should flake easily with a fork when done.
Make the Mango Salsa
  1. While the salmon bakes, chop fresh mango, red onion, cilantro, and jalapeño. Combine them in a bowl, adding lime juice for brightness and seasoning with salt.
Assemble Your Dish
  1. Once the salmon is cooked, remove it from the oven and let it rest for a minute. Top each fillet generously with your vibrant mango salsa.
