  • 3 pounds beef roast (e.g., ribeye or sirloin) Choose a well-marbled cut for best flavor.
Herbs and Spices
  • 2 tablespoons fresh rosemary, chopped Use more for a stronger flavor.
  • 6 cloves garlic, minced Adjust according to taste.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper Freshly ground is recommended.
Oil
  • 2 tablespoons olive oil For searing the roast.

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the chopped rosemary, minced garlic, salt, and black pepper.
  3. Rub the olive oil all over the beef roast, then coat it with the rosemary and garlic mixture.
Cooking
  1. Heat a roasting pan over medium-high heat and sear the beef roast on all sides until browned, about 3-4 minutes per side.
  2. Transfer the roast to the oven and cook until it reaches an internal temperature of 135°F (57°C) for medium-rare, about 1.5 hours.
  3. Remove the roast from the oven and let it rest for at least 15 minutes before slicing.
