Ingredients
  

For the Salad
  • 2 cups edamame frozen, boiled
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes
  • ¼ cup red onion finely chopped
  • 1 cup bell pepper chopped
For the Dressing
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon lemon juice fresh-squeezed
  • 1 teaspoon honey or agave syrup
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Boil 2 cups of frozen edamame pods in salted water for 5 minutes until tender yet slightly firm.
  2. Drain the edamame and rinse under cold water to stop the cooking process.
  3. Dice 1 cup of cucumber and 1 bell pepper into bite-sized pieces.
  4. Finely chop ¼ cup of red onion and add to the veggie bowl.
Mixing
  1. In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, and 1 tablespoon of rice vinegar.
  2. In a large salad bowl, toss together the edamame, diced veggies, and dressing until evenly coated.
  3. Cover the salad and refrigerate for at least 30 minutes before serving.
