Ingredients
  

Salad Base
  • 1 kg potatoes waxy variety, such as Yukon Gold
  • 200 g hot smoked salmon flaked
  • 100 g green beans trimmed and cut into 2-inch pieces
  • 4 large eggs hard boiled and chopped
  • 1 bunch fresh dill chopped
Dressing
  • 150 g Greek yogurt or sour cream
  • 2 tbsp mayonnaise optional for creaminess
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • salt to taste
  • pepper to taste

Method
 

Prepare the Potatoes
  1. Place the potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
  2. Drain and let cool slightly, then cut into bite-sized pieces.
Cook the Green Beans
  1. In the same pot, blanch the green beans in boiling water for 3-4 minutes until bright green and tender-crisp.
  2. Drain and immediately transfer to ice water to stop cooking. Drain again and set aside.
Make the Dressing
  1. In a mixing bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth.
Combine the Salad
  1. In a large bowl, combine the potatoes, green beans, chopped eggs, flaked hot smoked salmon, and fresh dill.
  2. Pour the dressing over the salad and gently toss to combine. Adjust seasoning with salt and pepper as needed.
Serve
  1. Serve the potato salad chilled or at room temperature.

Notes
