Ingredients
  

Pesto Ingredients
  • 2 cups fresh basil leaves packed
  • 1/2 cup pine nuts lightly toasted
  • 2 cloves garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Making the Pesto
  1. In a food processor, combine the basil leaves, pine nuts, and minced garlic. Pulse until finely chopped.
  2. Add the grated Parmesan cheese and pulse again until combined.
  3. While the food processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
  4. Season with salt and black pepper to taste, and pulse to combine.
  5. Transfer the pesto to a bowl or jar and use immediately or store in the refrigerator.

Notes

Pesto can be stored in an airtight container in the refrigerator for up to a week. To prevent browning, drizzle a thin layer of olive oil on top before sealing.
