- Choose your steak. Select a high-quality cut, like ribeye or sirloin, that’s at least 1 inch thick.
- Season generously. Sprinkle both sides of the steak with salt and freshly cracked black pepper. Allow it to rest for about 30 minutes at room temperature.
- Preheat your skillet. Heat a cast-iron skillet over medium-high heat until it's hot but not smoking—around 400°F.
- Add oil. Drizzle in a tablespoon of high-smoke point oil, like canola or avocado oil.
- Sear the steak. Carefully place the steak in the pan and sear for about 4-5 minutes without moving it.
- Flip and cook. After 4-5 minutes, flip the steak gently; let it cook on the other side for another 3-4 minutes for medium-rare.
- Rest your steak. Transfer the steak to a cutting board and cover loosely with foil; let it rest for 5-10 minutes.
