For the Protein
  • 1 lb boneless chicken thighs Thighs are juicier than breasts.
  • 1/2 lb chorizo sausage (sliced) Turkey chorizo can be used for a lighter option.
  • 1 lb shrimp (peeled and deveined) Add towards the end to avoid overcooking.
For the Vegetables
  • 1 cup green peas Omit if you're not a fan.
  • 1 cup tomatoes (diced) Canned diced tomatoes can also work.
For Seasoning
  • 1 teaspoon saffron threads Turmeric can be a substitute.
  • 2 teaspoons smoked paprika Regular paprika works too.
  • 1 teaspoon salt Adjust according to your broth’s saltiness.
For Garnish
  • 1/4 cup fresh parsley (chopped) Skip if you prefer an herb-free garnish.

Preparation
  1. Gather ingredients. Start by assembling all your fresh ingredients: rice, seafood, chicken, vegetables, and spices.
  2. Sauté aromatics. Heat olive oil in a large paella pan over medium heat. Add chopped onions and garlic, cooking until translucent and fragrant, about 3-5 minutes.
  3. Add proteins. Stir in your chicken pieces and cook for 5-7 minutes until they are golden brown on the outside.
  4. Incorporate rice. Pour in the rice and stir well to coat it with the oil and juices. Let it toast for about 2 minutes until it’s slightly translucent.
  5. Pour broth. Gradually add warm chicken or seafood broth (about 4 cups), ensuring the rice is fully submerged. Bring to a gentle boil before reducing the heat to low.
