Ingredients
  

Olives
  • 1 cup green olives pitted and sliced
  • 1 cup black olives pitted and sliced
  • 1/2 cup kalamata olives pitted and sliced
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1/2 cup bell pepper diced
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Ingredients
  1. Slice the green, black, and kalamata olives and place them in a mixing bowl.
  2. Halve the cherry tomatoes, chop the red onion, and dice the bell pepper. Add them to the bowl with the olives.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the olive and vegetable mixture. Toss gently to combine.
  2. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
