Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup milk or non-dairy alternative
  • 1 large egg
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
Cook the Pancakes
  1. Heat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  2. Using a ladle, pour small amounts of batter onto the skillet to form mini pancakes.
  3. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
  4. Repeat with the remaining batter, adjusting the heat as necessary.
Serve
  1. Serve the mini pancakes warm with maple syrup, fresh fruit, or your favorite toppings.
