Mini Egg Cheesecake

Delicious mini cheesecakes topped with chocolate eggs, perfect for Easter or any special occasion.

Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 5 tablespoons unsalted butter, melted
Filling
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
Topping
  • 12 pieces chocolate eggs for decoration

Method
 

Prepare the crust
  1. Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom of a muffin tin to form the crust.
Make the filling
  1. In a mixing bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, and mix until combined.
  2. Add eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until smooth.
Bake
  1. Pour the filling over the prepared crust in the muffin tin, filling each cup about 3/4 full.
  2. Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  3. Remove from the oven and let cool completely before refrigerating for at least 2 hours.
Serve
  1. Once chilled, remove the mini cheesecakes from the muffin tin and top each with chocolate eggs for decoration.

Notes
