Ingredients
  

Rice and Vegetables
  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth or chicken broth
  • 1 medium onion finely chopped
  • 1 clove garlic minced
  • 1 medium tomato diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 cup frozen peas and carrots thawed

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the rinsed rice to the saucepan and cook, stirring frequently, until the rice is lightly toasted, about 2-3 minutes.
  3. Stir in the diced tomato, cumin, chili powder, and salt. Cook for another minute.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and fluff the rice with a fork. Stir in the thawed peas and carrots.
