Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Marinade
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 teaspoon lemon zest
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Method
 

Marinate the Chicken
  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, black pepper, salt, garlic powder, and oregano.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.
Cook the Chicken
  1. Preheat the grill or skillet over medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for 5 minutes before slicing.
