- Prepare your artichokes by trimming the tops and removing the tough outer leaves. Cut them in half and scoop out the fuzzy choke from the center, creating a cozy space for your delicious filling.
- Blanch the artichoke bottoms in boiling salted water for about 5 minutes. This step softens them and enhances their vibrant green color.
- Mix your filling in a bowl by combining breadcrumbs, grated Parmesan cheese, lemon juice, zest, minced garlic, and chopped parsley. Stir until well blended.
- Stuff each artichoke bottom generously with the lemon Parmesan mixture. Press down lightly to pack it in.
- Arrange the stuffed artichokes in a baking dish and drizzle with olive oil. Bake at 375°F for 20-25 minutes or until golden brown and crispy on top.
- Serve warm as an appetizer or side dish, garnished with additional lemon zest and parsley.
