Preparation
  1. Prepare your artichokes by trimming the tops and removing the tough outer leaves. Cut them in half and scoop out the fuzzy choke from the center, creating a cozy space for your delicious filling.
  2. Blanch the artichoke bottoms in boiling salted water for about 5 minutes. This step softens them and enhances their vibrant green color.
  3. Mix your filling in a bowl by combining breadcrumbs, grated Parmesan cheese, lemon juice, zest, minced garlic, and chopped parsley. Stir until well blended.
  4. Stuff each artichoke bottom generously with the lemon Parmesan mixture. Press down lightly to pack it in.
  5. Arrange the stuffed artichokes in a baking dish and drizzle with olive oil. Bake at 375°F for 20-25 minutes or until golden brown and crispy on top.
