Optional Garnish

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure a perfect cook.
  2. Prepare the salmon fillets by patting them dry with paper towels.
  3. Whisk together olive oil, minced garlic, lemon juice, and zest in a small bowl.
  4. Arrange the vegetables on a large sheet pan. Drizzle them with olive oil and season with salt and pepper.
  5. Place the salmon fillets skin-side down on top of the veggies. Brush generously with your lemon garlic mixture.
  6. Roast everything in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork and the veggies are tender-crisp.
  7. Garnish with fresh parsley or additional lemon slices before serving.
