Ingredients
  

For the Cabbage
  • 1 medium head green cabbage for vibrant color and crunch
  • 2 medium carrots grated for even cooking
  • 1 medium bell pepper red or yellow for added sweetness
For the Seasoning
  • 1 medium onion sauté until translucent
  • 2 cloves garlic minced for aromatic kick
  • 1 teaspoon thyme fresh or dried
Optional Extras
  • 1 to taste scotch bonnet pepper for a spicy kick
  • 2 tablespoons olive oil or coconut oil for sautéing

Method
 

Prepare the Vegetables
  1. Start by washing and slicing your cabbage into thin strips. Gather bell peppers and onions, chopping them into colorful pieces.
Sauté Aromatics
  1. Heat a splash of oil in a large skillet over medium heat. Add chopped onions and bell peppers, cooking until they soften and turn fragrant, about 4-5 minutes.
Add Cabbage
  1. Toss in the sliced cabbage, stirring well to incorporate with the aromatics. Cook for about 10-12 minutes until the cabbage is tender but still has a lovely crunch.
Season Generously
  1. Sprinkle in salt, pepper, and any additional spices you prefer, like thyme or crushed red pepper. Stir everything together for about 2-3 minutes.
Finish with Lime Juice
  1. Squeeze fresh lime juice over the cooked cabbage just before serving to add a zesty brightness.
