Ingredients
  

Base Ingredients
  • 1 cup long-grain white rice rinsed and drained
  • 5 cups water
  • 1 cup milk can use almond or coconut milk for a dairy-free version
  • 1/2 cup sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon plus extra for serving
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Soak the rinsed rice in water for at least 3 hours or overnight to soften.
  2. Drain the rice and transfer it to a blender. Add 5 cups of fresh water and blend until smooth.
  3. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large bowl to separate the liquid from the solids.
  4. Add milk, sugar, vanilla extract, ground cinnamon, and salt to the strained liquid. Stir well to combine.
  5. Chill the horchata in the refrigerator for at least 30 minutes before serving.
  6. Serve over ice and sprinkle with additional cinnamon if desired.

Notes

Horchata can be stored in the refrigerator for up to 3 days. Shake well before serving as ingredients may settle.
