Preparation
  1. Start by cutting your chicken thighs into bite-sized pieces, ensuring they’re uniform for even cooking.
  2. In a bowl, combine the chicken with soy sauce, garlic powder, and ginger powder. Let it marinate for at least 30 minutes.
  3. Preheat your grill or stovetop skillet over medium-high heat.
Cooking
  1. Add the marinated chicken in a single layer and cook for about 5-7 minutes, stirring occasionally until golden brown and cooked through.
  2. In the same pan, toss in sliced zucchini, bell peppers, and onions. Sauté for about 3-5 minutes until tender.
  3. Return the cooked chicken to the pan with vegetables, mixing everything together for a minute or two. Serve immediately over rice or noodles.
