Ingredients
  

Fish Cake Mixture
  • 1 lb fresh fish fillets such as cod or salmon
  • 1 cup mashed potatoes cooked and cooled
  • 1 large egg beaten
  • 1 cup bread crumbs for coating
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
For Frying
  • 1/4 cup vegetable oil for frying

Method
 

Prepare the Fish Cake Mixture
  1. In a mixing bowl, combine the fish fillets, mashed potatoes, beaten egg, parsley, lemon juice, salt, black pepper, and garlic powder. Mix until well combined.
  2. Form the mixture into patties, about 3 inches in diameter.
Fry the Fish Cakes
  1. Heat the vegetable oil in a frying pan over medium heat.
  2. Add the fish cakes to the pan and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
Serve
  1. Remove the fish cakes from the pan and drain on paper towels. Serve warm with your choice of dipping sauce.

Notes

These fish cakes can be made ahead of time and frozen. Just fry them straight from the freezer, adding a few extra minutes to the cooking time.
