Ingredients
  

Dough
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 teaspoon salt
  • 1/4 cup cold water more if needed
Filling
  • 1 cup ground beef or chicken
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 cup green olives chopped
  • 1 egg hard-boiled chopped
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour and salt. Add cold butter and mix until crumbly.
  2. Gradually add cold water, mixing until a dough forms. Wrap in plastic and refrigerate for 30 minutes.
Prepare the Filling
  1. In a skillet, cook ground beef with onion and garlic over medium heat until browned.
  2. Stir in cumin, paprika, olives, hard-boiled egg, parsley, salt, and pepper. Remove from heat and let cool.
Assemble the Empanadas
  1. Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8 inch thick.
  2. Cut out circles using a cookie cutter or glass. Place a spoonful of filling in the center of each circle.
  3. Fold the dough over the filling to create a half-moon shape and crimp the edges to seal.
Bake
  1. Place the empanadas on a baking sheet. Bake for 20-25 minutes or until golden brown.
  2. Let cool slightly before serving. Enjoy!
