Ingredients
  

Rice Base
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth or vegetable broth for vegetarian option
  • 1 tablespoon olive oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 medium tomato diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cooking the Rice
  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic and diced tomato, cooking for another 2 minutes until the tomato softens.
  3. Stir in the rinsed rice, cumin, paprika, salt, and pepper, cooking for 1-2 minutes until the rice is lightly toasted.
  4. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  5. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
