Ingredients
  

Filling
  • 4 cups mixed berries (strawberries, blueberries, raspberries) fresh or frozen
  • 1 cup granulated sugar adjust based on fruit sweetness
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 cup unsalted butter melted
  • 1 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the mixed berries, sugar, cornstarch, and vanilla extract. Toss gently to coat the berries evenly.
Make the Topping
  1. In another bowl, whisk together the flour, milk, sugar, baking powder, melted butter, and salt until smooth.
Assemble and Bake
  1. Pour the berry mixture into a greased baking dish. Pour the batter over the berries, spreading it evenly. Bake for 30-35 minutes or until the topping is golden brown and a toothpick comes out clean.
Serve
  1. Let the cobbler cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream.
