Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
For the Rice
  • 2 cups jasmine rice or any preferred rice
  • 4 cups water
  • 1 teaspoon salt
For the Vegetables
  • 1 cup broccoli florets steamed
  • 1 carrot carrot sliced
  • 1 cup cucumber sliced
For the Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Method
 

Prepare the Rice
  1. Rinse the jasmine rice under cold water until the water runs clear. Combine rice, water, and salt in a rice cooker and cook according to the manufacturer's instructions.
Cook the Salmon
  1. Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the salmon skin-side down for 3-4 minutes until crispy, then transfer to the oven and bake for 10-12 minutes until cooked through.
Prepare the Vegetables
  1. Steam the broccoli florets until tender. Slice the carrot and cucumber.
Make the Sauce
  1. In a small bowl, whisk together soy sauce, honey, rice vinegar, and sesame oil until well combined.
Assemble the Bowl
  1. In a bowl, layer the cooked rice, topped with crispy salmon, steamed broccoli, sliced carrot, and cucumber. Drizzle with the sauce before serving.
