Method
 

Cooking the Pasta
  1. Start by boiling a large pot of salted water. Add your favorite pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving a bit of pasta water.
Sautéing the Vegetables
  1. In a large skillet over medium heat, melt some butter and add minced garlic and chopped onions. Sauté until fragrant and translucent, around 3-4 minutes.
Adding Spinach and Artichokes
  1. Toss in fresh spinach and canned artichokes, stirring until the spinach wilts down—this usually takes about 2-3 minutes.
Making the Creamy Sauce
  1. Pour in heavy cream, stirring well to combine with the veggies. Allow it to simmer for about 5 minutes until slightly thickened.
Combining Pasta and Sauce
  1. Gently fold the cooked pasta into the creamy spinach artichoke mixture. If it seems too thick, add a splash of reserved pasta water to achieve your desired consistency.
Seasoning to Taste
  1. Sprinkle in salt, pepper, and grated Parmesan cheese. Stir everything together until the cheese melts beautifully, creating a luscious coating for your pasta.
