Creamy Salmon Pasta

Ingredients
  

Pasta
  • 12 oz Fettuccine or your choice of pasta
Salmon
  • 1 lb Salmon fillet skinless, cut into bite-sized pieces
Sauce
  • 2 tbsp Olive oil
  • 3 cloves Garlic minced
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 1 cup Parmesan cheese grated
  • 1 tbsp Lemon juice freshly squeezed
  • 1 tsp Dried dill
Garnish
  • 2 tbsp Fresh parsley chopped

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.
Prepare the Salmon
  1. In a skillet, heat olive oil over medium heat. Add the salmon pieces and cook for about 5-7 minutes, or until cooked through. Remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.
  2. Bring the mixture to a simmer, then add the Parmesan cheese, lemon juice, dill, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
Combine and Serve
  1. Add the cooked pasta and salmon back into the skillet, tossing to coat in the creamy sauce. Cook for an additional 2-3 minutes to heat through.
  2. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, you can substitute half-and-half for heavy cream.
