For the Bisque
  • 1 can artichoke hearts canned or frozen
  • 1 medium onion sautéed
  • 2 cloves garlic freshly minced
  • 4 cups vegetable broth low-sodium
  • 1 cup heavy cream or coconut milk for dairy-free
  • 2 tablespoons lemon juice freshly squeezed
  • to taste salt
  • to taste pepper
For Garnish
  • 2 tablespoons chopped chives
  • 1 cup croutons

Method
 

Cooking the Bisque
  1. Sauté the onions and garlic in a large pot over medium heat until translucent, about 5 minutes.
  2. Add the artichokes, vegetable broth, and seasonings. Bring to a gentle simmer, allowing flavors to meld for about 10 minutes.
  3. Blend the mixture until silky smooth using an immersion blender or in batches with a countertop blender.
  4. Stir in the heavy cream and lemon juice, heating gently until warmed through.
  5. Serve in bowls garnished with fresh herbs or croutons.
