  • 1 lb large shrimp deveined and peeled
  • 1 cup cups coconut flakes unsweetened
  • 1/2 cup cups all-purpose flour
  • 2 large eggs
  • 1 cup cups panko breadcrumbs
For the Sweet Chili Sauce
  • 1/2 cup cups sweet chili sauce high-quality or homemade
  • 2 tbsp tablespoons lime juice

Preparation
  1. Start by peeling and deveining your shrimp, leaving the tails on for an elegant presentation. Rinse them under cold water and pat dry with paper towels.
  2. In a shallow bowl, combine flour, salt, and pepper. In another bowl, beat eggs until frothy. In a third bowl, mix shredded coconut and panko breadcrumbs until well combined.
  3. First, dip each shrimp in the flour mixture, shaking off excess. Next, coat it in the beaten eggs, then roll it in the coconut-panko mixture until fully covered and beautifully textured.
  4. In a large skillet, heat about 1 inch of oil over medium-high heat (around 350°F). You can test if it's ready by dropping in a small piece of bread; it should sizzle immediately.
  5. Carefully place the coated shrimp in the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side until they turn golden brown and crispy.
  6. Once cooked, transfer the shrimp to a plate lined with paper towels to absorb any excess oil. This will keep your coconut shrimp nice and crispy!
  7. Plate your delicious coconut shrimp alongside a small bowl of sweet chili sauce for dipping. The contrast of flavors will elevate this dish wonderfully!
