Ingredients

Rice Ingredients
  • 1 cup long-grain white rice rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
Flavoring Ingredients
  • 1 cup fresh cilantro chopped
  • 1 lime juice freshly squeezed
  • 1 clove garlic minced

Method

Cooking the Rice
  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the rinsed rice and salt, stirring to coat the rice in the oil. Cook for 2-3 minutes until the rice is slightly toasted.
  3. Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is cooked and water is absorbed.
Finishing Touches
  1. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  2. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice. Adjust seasoning if necessary.
  3. Serve warm as a side dish.
