Ingredients
  

Salmon
  • 4 fillets salmon skinless
  • 2 tablespoons olive oil for marinating
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Rice and Vegetables
  • 2 cups cooked rice white or brown
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup avocado sliced
  • 1 cup cilantro chopped
Toppings
  • 1 lime lime wedges for serving
  • 1 tablespoon sour cream optional

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, garlic powder, salt, and black pepper.
Marinate the Salmon
  1. Place the salmon fillets in the marinade and let sit for at least 15 minutes.
Cook the Salmon
  1. Preheat the grill to medium-high heat. Grill the salmon for about 5-7 minutes on each side, or until cooked through.
Assemble the Bowls
  1. In serving bowls, layer cooked rice, corn, black beans, cherry tomatoes, and avocado.
  2. Top with grilled salmon and sprinkle with chopped cilantro.
  3. Serve with lime wedges and a dollop of sour cream if desired.
