Ingredients
  

For the Chicken
  • 2 lbs bone-in chicken thighs skinless
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 2 cups chicken broth
  • 2 tbsp vegetable oil
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
For Serving
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 large lime cut into wedges
  • 1 cup onion diced
  • 1 cup salsa for dipping

Method
 

Prepare the Chicken
  1. In a Dutch oven, heat vegetable oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  2. Add chicken thighs, broth, oregano, cumin, chili powder, smoked paprika, salt, pepper, and bay leaves. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for about 1.5 hours, or until chicken is tender.
Shred the Chicken
  1. Remove chicken from the pot and shred it using two forks. Discard bones and bay leaves.
  2. Blend the cooking liquid until smooth, then return shredded chicken to the pot.
Assemble the Tacos
  1. Heat a skillet over medium heat. Dip tortillas in the broth, then place them in the skillet.
  2. Fill each tortilla with shredded chicken and fold in half. Cook until crispy and golden on both sides.
Serve
  1. Serve tacos with chopped cilantro, diced onion, lime wedges, and salsa on the side.

Notes
