Prepare the Chicken
- In a Dutch oven, heat vegetable oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add chicken thighs, broth, oregano, cumin, chili powder, smoked paprika, salt, pepper, and bay leaves. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 1.5 hours, or until chicken is tender.
Shred the Chicken
- Remove chicken from the pot and shred it using two forks. Discard bones and bay leaves.
- Blend the cooking liquid until smooth, then return shredded chicken to the pot.
Assemble the Tacos
- Heat a skillet over medium heat. Dip tortillas in the broth, then place them in the skillet.
- Fill each tortilla with shredded chicken and fold in half. Cook until crispy and golden on both sides.
Serve
- Serve tacos with chopped cilantro, diced onion, lime wedges, and salsa on the side.
