  • 2 pounds chicken thighs bone-in, skin-on for more flavor
  • 1/2 cup soy sauce preferably low sodium
  • 1/2 cup white vinegar can substitute with cane vinegar
  • 1 cup water
  • 1 medium onion sliced
  • 4 cloves garlic minced
  • 1 teaspoon black peppercorns whole
  • 1 tablespoon brown sugar optional, for sweetness
  • 2 tablespoons vegetable oil for sautéing

Method
 

Cooking Steps
  1. Heat the vegetable oil in a large pot over medium heat. Add the sliced onion and minced garlic, sauté until fragrant.
  2. Add the chicken thighs to the pot and cook until browned on all sides.
  3. Pour in the soy sauce and vinegar. Add the water, bay leaves, and black peppercorns. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 30-40 minutes, or until the chicken is tender.
  5. If desired, stir in brown sugar for added sweetness. Adjust seasoning to taste.
  6. Serve hot with steamed rice.
