Method
Prepare the Batter
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the granulated sugar, brown sugar, oil, and eggs until well combined.
- Stir in the grated carrots and crushed pineapple.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Bake the Bars
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan before frosting.
Prepare the Frosting
- In a mixing bowl, beat together the cream cheese and butter until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- Spread the frosting over the cooled carrot cake bars.
