Carnitas Tacos

Ingredients
  

Carnitas
  • 3 lbs pork shoulder trimmed and cut into large chunks
  • 1 tbsp olive oil for browning
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 onion yellow onion chopped
  • 4 cloves garlic minced
  • 1 cup orange juice
  • 1 cup chicken broth
Taco Assembly
  • 8 pieces corn tortillas warmed
  • 1 cup cilantro chopped
  • 1 cup onion diced
  • 1 cup lime wedges for serving
  • 1 cup salsa for serving

Method
 

Prepare the Carnitas
  1. Heat olive oil in a skillet over medium-high heat. Season pork shoulder with salt, pepper, cumin, and oregano. Brown the pork on all sides.
  2. Transfer the browned pork to a slow cooker. Add chopped onion, minced garlic, orange juice, and chicken broth.
  3. Cover and cook on low for 6-8 hours or until the pork is tender and easily shredded.
  4. Once cooked, shred the pork using two forks and mix it with the cooking juices.
Assemble the Tacos
  1. Warm the corn tortillas in a skillet or microwave.
  2. Fill each tortilla with shredded carnitas, and top with diced onion and chopped cilantro.
  3. Serve with lime wedges and salsa on the side.

Notes

For extra flavor, broil the shredded carnitas in the oven for a few minutes until crispy before serving.
