Ingredients
  

Pasta
  • 12 oz spaghetti or your choice of pasta
Caramelized Onions
  • 2 large onions sliced
  • 2 tbsp olive oil for cooking
  • 1 tbsp butter for added richness
  • 1 tsp salt to taste
  • 1 tsp sugar to enhance caramelization
Sauce
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream for creaminess
  • 1/2 cup parmesan cheese grated
  • 1/4 cup fresh parsley chopped, for garnish
Seasoning
  • 1/2 tsp black pepper freshly ground
  • 1/4 tsp red pepper flakes optional, for heat

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
Caramelize Onions
  1. In a skillet, heat olive oil and butter over medium heat. Add sliced onions and salt, cooking slowly until onions are golden brown and caramelized, about 20-25 minutes. Stir occasionally.
Prepare Sauce
  1. Add minced garlic to the caramelized onions and cook for an additional 1-2 minutes until fragrant. Pour in vegetable broth and bring to a simmer.
  2. Stir in heavy cream and grated parmesan cheese, mixing until the cheese is melted and the sauce is creamy. Season with black pepper and red pepper flakes if using.
Combine and Serve
  1. Add the cooked pasta to the sauce, tossing to coat evenly. Serve hot, garnished with fresh parsley.

Notes

For a vegan version, substitute heavy cream with coconut cream and parmesan with nutritional yeast.
