  • 1 lb Fresh shrimp deveined and peeled
  • 2 tbsp Cajun seasoning adjust to taste
  • 2 tbsp Olive oil for searing
For the Rice
  • 1 cup Long-grain rice for absorbing flavors
  • 2 cups Chicken broth for extra depth
  • 1 cup Bell peppers red and green, chopped
For the Aromatics
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 stalks Green onions for garnish

Method
 

Cooking Steps
  1. In a large skillet, heat olive oil over medium heat. Add chopped onions, bell peppers, and celery. Cook for 5-7 minutes until they're soft and fragrant.
  2. Sprinkle in your Cajun seasoning, minced garlic, and a dash of salt. Stir well to coat the veggies, cooking for about 1 minute until everything is well combined and aromatic.
  3. Toss in your shrimp and cook for 3-4 minutes until they turn pink and opaque.
  4. Add uncooked white rice to the skillet, stirring to mix it evenly with the shrimp and vegetables. Let it cook for an additional minute to absorb those fabulous flavors.
  5. Carefully add chicken broth into the skillet, ensuring everything is submerged. Bring it to a gentle simmer; cover and let it cook for about 15-20 minutes.
  6. Once the rice absorbs all the liquid, remove from heat and let it sit covered for an extra 5 minutes. Then, fluff with a fork to separate the grains.
