Ingredients
  

For the Soup Base
  • 1 head Cabbage chopped
  • 1 lb Ground Beef lean
  • 1 medium Onion yellow, chopped
  • 2 cloves Garlic minced
  • 2 medium Carrots diced or sliced
  • 2 stalks Celery finely chopped
For the Seasoning
  • 4 cups Beef Broth low-sodium
  • 1 can Diced Tomatoes
  • 2 leaves Bay Leaves remove before serving
  • 1 teaspoon Thyme dried
For Garnishing (Optional)
  • 2 tablespoons Parsley finely chopped
  • 1/4 cup Parmesan Cheese freshly grated

Method
 

Cooking Steps
  1. Sauté the onions and garlic in a large pot over medium heat until they become fragrant and translucent, about 5 minutes.
  2. Brown the ground beef in the same pot, breaking it apart with a wooden spoon. Cook for about 6-8 minutes until it's nicely browned and no longer pink.
  3. Add chopped cabbage, diced tomatoes, and beef broth to the pot. Stir everything together and bring it to a gentle simmer for about 20 minutes. The cabbage should be tender by now.
  4. Season the soup with salt, pepper, and your favorite herbs like thyme or bay leaves. Let it simmer for another 10 minutes so the flavors meld beautifully.
  5. Serve the soup hot in bowls, garnished with fresh parsley if desired.
